"Pieczen Siekana - Klops -- Polish Meat Loaf" from Bandung Restaurant, Madison, WI

3 lb Ground beef

1 lb Ground pork

1/4 lb Kidney fat, chopped fine

1 c Bread crumbs, day old

1 Onion, chopped fine

2 Egg yolks

1/4 lb Salt pork, chopped

3 tb Butter

1 tb Flour

1/2 ts Savory

1/2 c Cream

Salt and pepper Fry onion in butter until transparent, not yellow. Combine the meat, kidney fat, salt pork, bread crumbs, onion, egg yolks, and seasonings and mix very thoroughly with your hand. Shape into a loaf, rub with butter and bake at 350F for one hour. Baste often. In the last 15 minutes, sprinkle flour on meat and add cream.

DESCRIPTION: This is a really great restaurant that serves unbelievably delicious food. Indonesian food is somewhat like Thai food, but more spicier. Be sure to order the tapioca chips to munch on while waiting for your meal. The staff are friendly and exceptionally attentive. I was particularily pleased since I have to avoid gluten, and when I told them I am "allergic" to wheat, they knew right away that my meal needed to be gluten-free and took the steps to ensure that it was such. That was a load off my mind. (If you are avoiding gluten, be sure to let them know, since some ingredients, like soy sauce, may have wheat in them...)
